No-Bake Coffee Cheesecake

Description:
A creamy, rich and aromatic coffee cheesecake that requires no oven. Perfect for coffee lovers, this dessert combines a buttery biscuit base with a velvety coffee-infused cream filling.


Ingredients

For the Base:

  • 200 g digestive or María biscuits
  • 80 g melted butter
  • 1 tsp instant coffee (optional, for enhanced flavor)

For the Cream Filling:

  • 500 g cream cheese (Philadelphia-style, at room temperature)
  • 200 ml heavy cream (35% fat)
  • 150 g powdered sugar
  • 3 tbsp instant coffee dissolved in 2 tbsp hot water
  • 1 tsp vanilla extract
  • 8 g unflavored gelatin (or 1 sachet) + 60 ml cold water

Optional Decoration:

  • Whipped cream
  • Coffee beans or cocoa powder
  • Grated dark chocolate

Instructions

1. Prepare the Base:

  1. Crush the biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  2. Mix the crumbs with melted butter and instant coffee (if using).
  3. Press the mixture into the base of a 20 cm (8-inch) springform pan using the back of a spoon or a flat-bottomed glass.
  4. Chill in the refrigerator while preparing the filling.

2. Prepare the Cream Filling:

  1. Bloom the gelatin: Mix the gelatin with cold water and let it sit for 5 minutes. Then gently heat it (in a microwave or double boiler) until fully dissolved.
  2. In a large bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
  3. Add the dissolved coffee and mix well.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture gently. Then pour in the dissolved gelatin and mix to combine thoroughly.

3. Assemble and Chill:

  1. Pour the filling over the chilled crust and smooth the top.
  2. Refrigerate for at least 4–6 hours, or overnight, until firm.

4. Decorate and Serve:

  1. Carefully remove from the mold, running a warm knife around the edges if needed.
  2. Decorate with whipped cream, coffee beans, grated chocolate or a dusting of cocoa.
  3. Serve chilled and enjoy!
